Gooseberry Margarita
A taste of sunshine in every sip

The Gooseberry Margarita is part of our second Gallery menu –featuring 10 cocktails inspired by 13 pieces of art from our 400-strongcollection.
The inspiration behind the Margarita is Richard Bartle’s1990 Beach Scene. In Bartle’s own words, ‘the painting was inspired by the idea that a holiday is sold as an expression of personality and a chance for unique life experiences. The scene depicts a crowded beach surrounded by water. But, seeing all those people sweltering in the sun, I always thought how thirsty they looked, and was reminded of the saying ‘water, water, everywhere, and not a drop to drink’.’’

While we recommend you pop into the Lobby Bar to savour it in style, we have the recipe for you to recreate it at home:
Serves 1
20ml Olmeca Altos Plata Tequila
20ml Pod Pea Vodka
10ml Capreolus Gooseberry Eau de Vie
10ml Sipello Bittersweet Aperitif
25ml Elderflower cordial
25ml Lime juice
Sliced cucumber, to garnish
1. Pour all ingredients into the shaker and add ice
2. Shake for 12 seconds
3. Once cold, strain into chilled tumbler glass filled with a large ice cube
4. Garnish with cucumber and serve
